This is a variation on the original coconut milk ice cream recipe
- 2 15 oz cans coconut milk
- 1 cup strongly brewed decaf coffee, cooled
- 1 1/4 cup sugar
- 1/4 cup cocoa powder
- 1/4 tsp xanthan/guar gum
- pinch kosher salt
- 1 tsp vanilla
- 1 cup chocolate chips or mixed chocolate/coffee-chips
In a blender, mix first 7 ingredients. Put in fridge to chill.
Set up ice cream maker and add liquid as per directions. In last 5 minutes of mixing/chilling time, add chips. It will be soft-set, serve like that or put it in a plastic container in the freezer for later. Yum!
