Sausage-stuffed Chicken
This is a delicious gfcf, gluten free, family-friendly recipe! It is also (if you double check ingredients!) a wheat free, dairy free, soy free, egg free, tree nut free, peanut free, fish free, shellfish free, corn free, top 8 allergen free, and South Beach phase 2 safe recipe.
This is one of those really easy recipes that looks like it was very tricky
Ingredients:
- 2-3lbs boneless/skinless chicken thighs
- 10oz pkg frozen chopped spinach, defrosted
- about 1lb uncooked italian turkey sausage
- olive oil
- minced/pressed garlic cloves
Method:
Preheat oven to 375. Oil the bottom of a 9×13 baking dish.
Squeeze the sausage out of the casings and mix with spinach.
Open the chicken thighs, stuff sausage/spinach mixture inside, then put in baking dish, stuffed opening down. Repeat. Sprinkle olive oil and garlic over top.
Bake until probe thermometer reads 162degrees (about 45m-1hour).
This is delicious, and so quick and easy to make, but it looks fancy. Serve with some rice and a nice salad, or roast some veggies in the oven at the same time
