My 12 yr old is a vegetarian (self proclaimed since the age of 6) and she is allergic to eggs and nuts, so protein is an issue for her too. I have tried lentil soup before and she didn't care for it but I'm going to try again with this recipe. At least I know if she won't eat it I will. :) Oh that looks so good!
