<p><b>Ingredients</b></p>
<ul>
<li>4 cups powdered sugar</p>
<li>1 stick margarine (aka 1/2 cup), melted
<li>2 cups (or 1 18 oz container) chunky peanut butter
<li>1/2 cup coconut milk (use the thick part from a chilled can)
<li>1 TBS vanilla
<li>1 tsp salt
<li>1 1/2 bags (12 oz size) chocolate chips/chunks  (aka 3 cups)
<li>3 TBS shortening (we use Spectrum)
<li>several lightly salted peanuts
</ul>
<p><b>Method</b><br />
Combine ingredients through salt. Mix well.</p>
<p>Scoop into walnut-sized balls, and place on waxed paper.  Chill in refrigerator (or back porch in winter) for at least an hour.</p>
<p>Melt the chocolate &#038; shortening together, and use a fork or spoon to dip the peanut butter balls in the chocolate.</p>
<p>Decorate each one with a peanut on top.  Chill again, then eat!  Mmmm&#8230;.</p>

<li>1 TBS margarine
<li>1 TBS Karo syrup (light or dark) &#8211; sub cane syrup if corn-free
<li>1 tsp vanilla
<li>1/2 cup chopped pecans or walnuts</ul>
<p><b>Method</b><br />
Put ingredients through Karo syrup into a heavy saucepan with a candy thermometer.  Stir frequently until it comes to a boil.  </p>
<p>Allow it to boil for <b style="color:black;background-color:#ffff66">about</b> 20 minutes, until it reaches soft ball stage.  </p>
<p>Remove from the heat, and place pan in a bowl of cool water. Stir in the vanilla and nuts.  Keep stirring until it becomes thick and stops looking glossy.</p>
<p>Pour into a greased 8&#215;8 pan, and let set.  Cut into squares and serve.  Delicious!</p>

<p>Spoon 1 teaspoon of coconut into each muffin-liner.  put 2-3 almonds on top, then glop chocolate on top of that.  Put the plate/cookie sheet into the freezer, and about five min later, eat.  </p>

<p>Allow the mixture to boil for several minutes (more than five), until the thermometer reads “soft ball stage”.  You can’t just go by time, as coconut milk reacts a bit differently and the timing for evaporated milk doesn’t quite work.</p>
<p>Remove from heat, and mix in the vanilla and the chocolate chips.  Stir until well combined.  Pour out into a greased 9×9 or 8×11 pan.</p>
<p>If you are not sensitive to nuts, you can combine about 1/2 cup pecans/walnuts after adding the chocolate, or you can sprinkle some over the top of the pan of fudge.</p>

<li>2 cups cane sugar</li>
<li>3 squares unsweetened chocolate (Hershey’s unsweetened is just chocolate &amp; cocoa &#8211; Baker’s has added milk solids, oh joy)</li>
<li>2 tablespoons cane syrup</li>
<li>2/3 cup coconut milk</li>
<li>1 teaspoon vanilla (either vanilla powder, homemade in potato vodka, or otherwise “safe” vanilla)</li>
<li>1 tablespoon coconut oil</li>
</ul>
<p><strong>Method</strong>:</p>
<p>Mix the sugar, coconut milk,  chocolate, cane syrup and boil rather slowly, stirring until the ingredients are well blended.  Boil to the soft-ball stage, or 236 degrees.</p>
<p>Remove from the stove, add the coconut oil, but do not stir it in.  When lukewarm (about 120 degrees), add the vanilla and beat until it creams; that is, until the shiny appearance disappears and the fudge holds its shape. (this is from the original recipe, it doesn’t do quite this, just keep stirring for a while until it comes close to holding shape)</p>
<p>Spread it in a glass pan oiled with coconut oil and when it hardens cut it into squares.   Store in a pan/tupperware covered until it is gone.  Do NOT put it in the fridge, as that is too moist, and it will get mushy.</p>

			<content:encoded><![CDATA[<p>I love candied nuts.  Unfortunately, most commercial candied nuts contain wheat starch for some unknown reason.  I am sure there are dozens of recipes out there for candied nuts, but this is one I just threw together when my sweet tooth and almost-empty cupboard collided.  They are fabulous as a snack, over canned peaches, and over <a href="http://www.ourgaggleofgirls.com/recipes/?p=62">ice cream</a>.</p>

<p><strong>Ingredients</strong>:</p>
<ul>
<li>1/4 cup oil or margarine (half a stick)</li>
<li>1 cup brown sugar</li>
<li>1 tsp cinnamon</li>
<li>1/4 tsp salt</li>
<li>1 1/2 cups walnut pieces (or other nut that you can tolerate.  You could use larger seeds, such as pepitas, if you cannot tolerate nuts)</li>
</ul>
<p><strong>Method:</strong><br />
Melt the butter over medium heat in a small to medium sized non-stick skillet.</p>
<p>When the butter is melted, add the brown sugar, and stir with a spatula (a silicone one is best, as this will get hot).  Add the cinnamon and salt, and keep stirring.</p>
<p>Watch the mixture, and stir intermittently as it heats up.  In a few minutes it will melt and begin to bubble.  Watch out &#8211; this mixture is hot, and can burn you if you aren’t careful.  <em>(<strong>burns from candy hurt a LOT, as the candy sticks to the skin.  OUCH!</strong>)</em></p>
<p>Add the nuts, and stir carefully.  Keep the heat at medium, and stir intermittently, gently combining the candy mixture with the nuts.  Cook for about another 5 minutes, still stirring and mixing.</p>
<p>While the candied nuts are cooking, prepare a cookie sheet with a sheet of parchment paper or a <a href="http://www.amazon.com/gp/product/B00008T960?ie=UTF8&amp;tag=gagglebooks-20&amp;linkCode=as2&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B00008T960">Silpat Silicone Baking Mat</a>.  Pour the candied walnuts onto the parchment/silpat, and make sure they are scattered and separated over the sheet &#8211; if they clump, you’ll have a big lump of praline, which is yummy, but not easily scattered!</p>
<p>Let cool, and then eat.  If you have some will power, you can keep them in an airtight jar or container, or in a zip-top bag for easy snacking.  yum.</p>

<p><em>This is a delicious gfcf, gluten free, family-friendly recipe!  It is also (if you double check ingredients!)  a wheat free, dairy free, soy free, tree nut free, peanut free, fish free, shellfish free, and South Beach phase 2 safe recipe.</em></p>

<p><strong>Ingredients</strong></p>
<ul>
<li>2 cups chocolate chips (that’s 1 12 oz bag)</li>
<li>¼ cup coconut milk (warmed)</li>
<li>1 1/2 cups confectioners sugar</li>
<li>1 egg white</li>
</ul>
<p>Truffle Coating ideas:</p>
<ul>
<li>Cocoa</li>
<li>chopped nuts</li>
<li>Sprinkles/jimmies</li>
<li>Coconut</li>
<li>Non-pariels</li>
</ul>
<p>Melt chocolate in a double boiler.  When it’s melted, add the coconut milk and stir until combined, then let cool.</p>
<p>Measure sugar into large bowl, mix with egg white.  Add cooled chocolate, and stir to combine.</p>
<p>Shape the chocolate mixture into balls, then roll each chocolate ball into a topping.  <em>(sometimes this doesn’t work well, and you end up simply dumping lumps of chocolate into the topping, then spooning it out.  They still taste good, even if they are a bit flat.</em></p>
<p><em>Let cool and harden on a piece of wax paper.  Turn once or twice while hardening so they don’t become flat.  Store in an airtight container.  Yum!</em></p>
<p><em><em>(If you want to make twice as many, do it twice rather than doubling the recipe, because the chocolate needs to be a certain temperature to work with, and a double batch doesn’t work right).</em></em></p>

<p>This is a delicious gfcf, gluten free recipe!  It is also wheat free, dairy free, tree nut free, peanut free, top 8 allergen free, vegetarian recipe.  This recipe only has one egg in it, so it could easily be an egg free and vegan recipe.</p>

<p><strong>Ingredients</strong></p>
<ul>
<li>1 egg</li>
<li>4 cups gf flour (bean, amaranth, sorghum, whatever you have on hand)</li>
<li>1 1/2 &#8211; 2 cups starch (reserve 1/2 cup until you see how thick the batter is)</li>
<li>1 TBS xanthan gum</li>
<li>3/4 cup molasses</li>
<li>3/4 cup honey</li>
<li>1 stick margarine (1/2 cup)</li>
<li>1 tsp baking soda</li>
<li>1 tsp ground cardamom (this one is essential)</li>
<li>1 tsp anise seed (if you have it, if you don’t, you could leave it out)</li>
<li>1 tsp mace (you can substitute nutmeg if necessary)</li>
<li>1/2 tsp ground ginger</li>
<li>1 tsp ground pepper</li>
<li>1 tsp allspice</li>
<li>powdered sugar (aka confectioner’s sugar) for coating</li>
</ul>
<p><strong>Method</strong><br />
Heat honey, margarine, and molasses until margarine melts. Don’t boil!  Allow it to cool thoroughly, then add the egg and whisk it together.</p>
<p>Combine flour, starch, xanthan gum, and various spices.  Mix together in a stand mixer.  Add the molasses mixture over it and stir.  The batter should be very thick, if it is too thin, add the extra 1/2 cup starch.</p>
<p>Chill dough for at least overnight.</p>
<p>Preheat oven to 350 and scoop out dough and roll into walnut sized balls.  Place on a greased or lined cookie sheet (we love the <a href="http://www.amazon.com/gp/search?ie=UTF8&amp;keywords=silicone%20baking%20liner&amp;tag=glutenfreeliv-20&amp;index=kitchen&amp;linkCode=ur2&amp;camp=1789&amp;creative=9325">silicone baking liners</a><img src="http://www.assoc-amazon.com/e/ir?t=glutenfreeliv-20&amp;l=ur2&amp;o=1" style="border: medium none  ! important; margin: 0px ! important" border="0" height="1" width="1" />).  They don’t expand much, so you can place them pretty close together.  (this fills 3-4 cookie sheets)</p>
<p>Bake for 12 minutes.  Allow to cool for about 5 minutes, then toss in powdered sugar inside a large ziploc bag.  Allow to cool completely after being covered with powdered sugar.  Then scarf them up or place in an airtight tin until everyone has eaten them.</p>
